Lemon Curd Cheesecake Bars 

STEP 1:

Gather all ingredients for the lemon curd

STEP 2:

Whisk eggs, sugar, lemon juice and lemon zest in a double boiler

STEP 3:

Add unsalted butter. Pour lemon curd into a mason jar and allow to chill.

STEP 4:

Gather all ingredients for the cheesecake crust

STEP 5:

Melt the butter and crush the biscuits in a food processor.

STEP 6:

Mix until combined.

STEP 7:

Press onto the lined pan and blind bake.

STEP 8:

Gather ingredients for the cheesecake filling.

STEP 9:

Beat together cream cheese and sugar. Add in sour cream and eggs one at a time. 

STEP 10:

Pour onto baked crust.

STEP 11:

Bake. This cheesecake does not require a water bath

STEP 12:

Cool down slowly. Pour lemon curd on top and bake again. Let it chill before slicing.
