Ingredients you’ll need to make this pie:
- All-purpose flour: I highly recommend weighing all your ingredients using a kitchen scale for accurate recipe results. If you’re using cups, don’t scoop your cup into the flour. Spoon the flour into your cup and level it off with the back of a knife.
- Unsalted butter: It is very important to have your butter at room temperature. You can ensure this by lightly pressing your finger on the block of butter. It should slightly leave an imprint. I also prefer to use unsalted butter because salted butters have varying amounts of salt content in them and it is always a good idea to add it on your own and avoid your bakes from being too salty.
- Cold water: It is very important that you use as chilled and cold water as you can. This helps prevent the butter from melting while kneading the dough and resulting in those flaky layers.
- Eggs: Use large eggs and bring them to room temperature before mixing in. Eggs strengthen the binding of your curd when heating and also add moisture. Having your eggs at room temperature makes it easier to incorporate them and allow them to mix evenly in your lemon curd. A good way of doing this is by letting them sit in a bowl filled with room temperature water for around 10 minutes or until they come down to room temperature.
- Lemon zest: Citrus zests are known to add more flavor and fragrance to your bakes. You must not leave them out.
- Lemon juice: In my experience, homemade lemon juice gives an incredibly better flavor than store bought lemon juice. I highly recommend that you put in those few extra minutes and use homemade lemon juice for a rich, preservatives-free flavor.
- Turmeric powder: I always love adding lots of spices to my bakes. But if this is not something that you prefer, you can always leave it out.
- Cream of Tartar: This helps to give stability to your meringue and is a non negotiable ingredient. However, if you’re in a pinch you can substitute it with equal amounts of homemade lime juice. Store bought lime juice may not give accurate results.
- Powdered Sugar: This will help add sweetness and stability to your frosting. Add only a few spoons at a time and beat until completely incorporated. Don’t use granulated sugar as it will not dissolve in your frosting as powdered or confectioners’ sugar will.
Some Notes:
It is known to helping your dough stay cold for longer durations and helps avoid the butter from melting. However, as long as you’re not in extremely hot surroundings, you can skip this step by moving as fast as possible. Let the butter chill in the refrigerator while you weigh all your dry ingredients and mix them. Take out the butter only when you need it. I sometimes chill my pastry cutter with my butter depending on the temperature outside.
Yes you don’t have to make an all butter pie crust. You can always use a store-bought pie crust also. You can also swap half of the butter with shortening. Shortening has a higher melting point than butter and is much easier to handle. However, all butter pie crusts are thus more flakier than the ones made from shortening. Which is why, my pie crust recipe is an all butter one. However, shortening works perfectly too. You might require less amount of water while using shortening so I’ll recommend adding water as and when you need it rather than all at once.
Yes you can very well prepare the pie dough and let it chill in the refrigerator for 5 days and freeze it if you’ll need it after that. You can also prepare the lemon curd beforehand. However, the lemon curd will thicken when you let it chill in the refrigerator and you must let it come back to room temperature before baking the pie. You can chill the pie in the refrigerator after it is baked for upto a week. You can freeze the pie for upto 3 months too, but make sure you haven’t frosted it with meringue.

Ingredients
Pie Crust
- 1⅓ cup (161g) all-purpose flour
- ½ teaspoon salt
- 1 teaspoon granulated sugar
- ½ cup (113g) unsalted butter, cut into cubes
- ¼ cup (60ml) chilling cold water
Lemon Curd Filling
- 3 large eggs, at room temperature
- 1 tablespoon lemon zest
- ½ cup lemon juice
- 1 teaspoon turmeric powder
- 2 tablespoon heavy cream, optional
- ½ cup (113g) unsalted butter, cut into cubes
Meringue Frosting
- 1 egg white, at room temperature
- ¼ teaspoon cream of tartar or lime juice
- ¼ cup powdered sugar or confectioners’ sugar
Instructions
Pie Crust
- You can use a store-bought pie crust or you can make your own. Skip to making the lemon curd directly if you’re using a store bought pie crust.
- In a large bowl, add the flour, butter, salt and sugar. Mix well. Add cubed butter on top.
- Using a pastry cutter or two forks, cut the butter into the dry ingredientssuch that all pieces are completely coated by the flour. The pieces of butter should be about the size of a pea or a little larger.
- Start adding 2 tablespoons of ice cold water at a time and knead the pie dough with your hands or stir using a spoon. Make sure not to knead too much as the butter will start melting. Repeat this process until the dough starts coming together and forming large clumps. It will feel sticky but not overly wet. Do not add more water than you need to.
- Once the dough comes together, shape and flatten the dough into a disc of about 1-inch radius. Cover the dough with a plastic film or wrap and let it chill in the refrigerator for atleast 2 hours or upto 3 days before using it in a pie.
- Once chilled, take it out from the refrigerator and let it rest for 5 minutes. Place the dough on a lightly floured surface and start rolling it outwards using a rolling pin. We want to form a 12-inches diameter. Roll more on the edges as compared to the center. If the butter starts melting, chill the rolled dough again for about 10-15 minutes and continue rolling.
- Carefully place the dough on the greased pie dish. Tuck the edges in with your fingers, making sure it is completely smooth. Form a curved pattern using your knuckles.
- Chill the pie in the refrigerator for about 30 minutes. While the crust is chilling, preheat oven to 375°F(190°C).
- Remove the pie crust from the refrigerator and line it with a parchment paper. Fill the parchment paper with pie weights. This is important to avoid the pie crust from shrinking.
- Bake the pie crust for 14-15 minutes or until edges start to brown a little. Take out the pie from the oven and remove the pie weights. Also poke holes in the bottom of the pie crust using a fork to avoid it from rising. Bake the pie again for 10-12 minutes until browned.
- Take out the pie dish from the oven and place it on a wire rack. Let your pie cool completely before filling it with the lemon curd.
Lemon Curd Filling
- In a large bowl, add the eggs, lemon zest, lemon juice and turmeric powder. Place a glass dish on top of a saucepan of steaming water and add this mixture to the glass dish. This is known as the “bain-marie” method. You can also use a double boiler if you have one.
- Cook the lemon curd until it is thick enough to coat the back of your spoon. It will thicken more as it cool.
- Remove from heat and add cubed butter pieces (4-5 at a time) to the hot curd. Whisk vigorously until they completely melt. Repeat until all the butter is added and fully incorporated.
- Let the curd cool down to room temperature. Then add it to the pie crust and smooth the top using an offset spatula.
- Chill the pie in the refrigerator for atleast 4 hours or overnight before slicing.
Meringue Frosting
- In a separate bowl, add the egg whites. Using a hand mixer or a stand mixer fitted with paddle attachment, beat the egg whites on medium speed until light and foamy.
- Add in the cream of tartar or lemon juice. This is a non negotiable ingredient as it provides stability to your egg whites.
- Beat again on medium speed until soft peaks form. Add in the powdered sugar, one-half at a time and beat again on low speed until it is thoroughly combined. Repeat with the other half sugar.
- Beat on medium-high speed until stiff peaks form. Transfer the meringue to a piping bag fitted with a piping tip of your choice. I use a Wilton 1M star tip. Decorate your pie as you like! Enjoy!
- Store lemon pie in an airtight container in the refrigeratore for upto a week.
